Our Story
Seattle Lounge started with a simple belief: that the best bread comes from time, not shortcuts. Our bakers arrive before dawn so the first loaves hit the display case at 7 AM — crusty on the outside, soft and tangy within.
We source our flour, dairy, and produce from farms across the Pacific Northwest. Our coffee is roasted locally. Every pastry is shaped by hand. It's the kind of place where regulars know your name and your usual order.
The Craft
It's not complicated. It's just how we've always done it — and why our neighbors keep coming back.
Our sourdough proofs for 24 to 36 hours. That's not a gimmick — it's what gives our crumb its open structure and that deep, slightly tangy flavor you can't rush.
Every croissant, danish, and bun is formed by hand. Machines can replicate the shape, but they can't replicate the care that goes into each fold and turn.
Our flour comes from Washington mills, our dairy from Skagit Valley farms, and our coffee is roasted within an hour of us — because fresh matters.
